Winter special food: Stuffed Parathas

Aloo Parantha:-
Ingredients
2 and 1/4 cups wheat flour, 2 tbsp melted ghee, salt
For Stuffing
2 and1/2 cups potatoes (boiled, peeled and mashed), 2 tsp melted ghee, 1 tsp cumin seeds/jeera, 1/2 cup finely chopped onions, 1 tbsp finely finely chopped green chillies, salt, 1/2 tsp chilli powder, 2 tbsp finely chopped coriander leaves, 2 tsp dried mango powder/amchur, wheat flour for rolling, ghee for cooking
How to make
In a bowl, take wheat flour, ghee and salt. Mix it well. Add enough water and knead into semi-stiff dough. Keep aside. Take a pan and heat ghee. Now add cumin seeds. When the seeds crackle, add chopped onions and sauté on a medium flame for 2 minutes. Add chopped green chillies and mix well. Fry on medium flame for 1 minute. Now add boiled potatoes, salt, chilli powder, coriander leaves and dry mango powder. Mix well and cook on a medium flame for 1 to 2 minutes. Keep stirring. Divide the stuffing into 12 equal portions.
Now divide dough into 12 equal portions. Roll a portion of the dough ball into a circle. Place stuffing in the centre of the circle. Bring together all the sides in the centre and seal tightly. Meanwhile, put tava (griddle) on flame. Now again roll the ball again into a circle with the help of little flour. Now cook paratha with ghee until golden brown. Make remaining parathas in the same way. Serve tasty aloo parathas with fresh curd or pickle.
