Roasted Red Pepper and Tomato SoupPrep. Time: 10 mins.
Cook Time: 20 mins.
Servings: 4
Ingredients: 10 large tomatoes, halved and seeded
3 medium red bell peppers, halved and seeded
10 cloves garlic, peeled and crushed
1/4 cup olive oil
Salt and Pepper
2 Tbsp olive oil
28oz can diced tomatoes
1 large onion thinly sliced
2 cups water or vegetable stock
Direction:Preheat the oven to 450 degree. Toss the fresh tomatoes, bell peppers, garlic and 1/2 of the onion in 1/4 cup olive oil. Salt and pepper to taste and spread on a rimmed baking sheet. Cover the baking sheet in foil and roast for 20-30 minutes, or until tomatoes and peppers are soft. Remove foil and roast for an additional 5-10 minutes. Remove from oven and allow to cool.
In a large pot over medium heat, heat 2 Tbsp olive oil. Add the remaining onion and cook, stirring frequently, until onion is soft. Add the diced tomatoes and roasted vegetables, including the oil and juices from the roasting pan. Add the vegetable stock and simmer until tomatoes are very soft, about 30 minutes.Purée soup in a blender or food processor until smooth.
