Paneer Bhurji
Ingredients
Approx. 3 cups - crumbled Paneer, 1 - red Onion, 1 each - medium red, yellow and green bell peppers, 2-3 - ripe Tomatoes, chopped (or Tomato puree), 2-3 - Green chillies to taste, 1/2 tsp - Garam Masala, 1/4 tsp - Cumin seeds, 1/4 tsp - Turmeric, 1/2 tsp - coriander-cumin powder, Salt to taste, Few sprigs of Cilantro, Curry leaves for garnish.
How to make
In a skillet in 1 tsp oil, saute the seeds and spices until aromatic.
Add the onions and rest of the ingredients, except paneer, sprinkle salt and close the lid. Cook until soft - about 5-6 mins.
Next, add the crumbled paneer and cook for another 5 minutes for the paneer to soak up the flavours.
Garnish with cilantro and curry leaves and serve warm with phulkas/rotis.
It can be served to 4 peoples.
