Vegetable Jalfrezi

Ingredients1 1/2 cups boiled mixed vegetables like french beans , carrots and green peas,1 tbsp oil,1-1/2 tsp finely chopped green chillies,1/2 tsp grated ginger, 1/2 cup finely chopped onions,1-1/4 cups finely chopped tomatoes,1 tbsp finely chopped coriander,5 tbsp tomato ketchup,4 tbsp finely chopped spring onion greens,1/2 tsp chilli powder1 tsp sugar,salt to taste.
Method1.Heat the ghee in a deep kadhai, add the green chillies, ginger and onions and saute on a medium flame for 1 minute.
2.Add the tomatoes, tomato ketchup and coriander and cook for 3 to 4 minutes, while stirring occasionally.
3.Add the, boiled vegetables, spring onions, chilli powder, sugar, salt and 2 tbsp of water and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
4.Serve hot.
