Achari Aloo:-
Ingredients
500 grams baby potatoes boiled and peeled, 1/4 tsp vinegar, 1/2 tsp mustard seeds, 1/2 tsp fennel seeds/saunf, 4 dried red chillies, 2 tbsp mustard oil, 1 tsp cumin seeds, 1/2 tsp onion seeds/kalonji, 1/4 tsp turmeric powder, 1 tbsp garlic paste, 1 and 1/2 tsp ginger paste, salt to taste, 1/4 tsp black salt/kala namak, 1 tsp sugar, 3 teaspoons vinegar
How to make
First take fenugreek seeds, mustard seeds, fennel seeds and red chillies in a mixture. Grind them to coarse powder. Heat mustard oil in a pan. When oil begins to smoke, add cumin seeds, onion seeds and saute for 30 seconds. Now add turmeric powder and potatoes and stir. Add garlic paste and ginger paste and quarter cup of water. Mix them well. Add the ground spices, salt, black salt and sugar and mix well. Now add vinegar and quarter cup of water and cook till dry. Garnish it with coriander leaves and enjoy yummy Achari Aloo.
