Tea Time snack: Spring Rolls

Ingredients
For Stuffing
1 tbsp oil, 2 tsp garlic (finely chopped), 1 tsp ginger(finely chopped), 1/2
cup onion (sliced), 1/2 cup capsicum(sliced), 1 cup carrot (thickly grated),1
cup cabbage (shredded), 1/2 cup boiled hakka noodles, 2 tsp schezwan sauce, 1 tsp tomato ketchup, salt to taste
For Rolls
1/4 cup plain flour/maida, 4 tbsp
water, oil for deep-frying
How to make
Stuffing
In a broad non-stick pan, heat oil.
Now add garlic and ginger and fry them on high flame for 30 seconds. Add onions
in this and cook 2 minutes on high flame. Add capsicum slices and fry on high
flame for one more minute. Now add carrot, cabbage, hakka noodles. Cook all
these ingredients for 3 minutes. Keep stirring all the ingredients in pan. Now
turn off gas. Now mix schezwan sauce, tomato ketchup and salt and mix well.
Keep the stuffing aside.
Rolls
In a bowl take maida. Knead soft dough with water and maida. Now
make 7 equal portions from dough and 7 portions of stuffing too and keep them aside.
Take a portion of dough and roll it into wrapper. Now place a wrapper on a
clean, dry surface and place a portion of the filing mixture in one corner of
the wrapper. Roll over the wrapper till 3/4th portion. Fold over from both the
sides one by one towards the centre. Seal the edge using a little maida-water
mixture. Make the remaining rolls in the same manner. Now in deep pan, heat
oil. Deep fry these spring rolls on medium flame, till they turn golden brown
in colour. Now With a sharp knife, cut each spring roll diagonally into 3 equal
pieces. Serve hot crispy spring rolls with schezwan sauce.
