Tea time recipe: Methi Muthia

Ingredients
1and 1/4 cups fenugreek/methi leaves (chopped), 1/4 cup whole wheat flour/gehun ka atta, 1/4 cup besan/bengal gram flour, 1 and1/2 tsp ginger-green chilli paste, 1 and 1/4 tbsp sugar, 1/2 tsp chilli powder, 1/4 tsp turmeric powder/haldi, a pinch of baking soda, 1 and 1/2 tbsp oil, oil (for frying), salt to taste
For garnish
roasted cottage cheese/paneer (grated), sesame seeds, coriander leaves
How to make
In a bowl, take methi leaves and little salt and mix well. Keep them aside for 5 minutes and squeeze out all the excess liquid from methi leaves. Now combine methi leaves, gehun ka atta, besan, ginger-green chilli paste, sugar, chilli powder, haldi, baking soda, oil and salt together. Use water to knead into soft dough. Divide this dough into 15 equal portions and shape each portion roughly into an oval by rolling it between your palms and fingers. Now, heat oil in a kadhai and fry muthias on medium flame till they turn golden brown. Drain on an absorbent paper. Garnish them with roasted sesame seeds, coriander leaves and paneer. Serve Methi muthias with green chutney and tomato ketchup.
