Sweets for Fast: Sweet Potato Halwa

Ingredients
3 sweet potatoes (medium sized), 3/4 cup low-fat milk, 1 tbsp sugar, 1/4 tsp cardamom/elaichi powder, a few saffron/kesar strands mixed with 1 tbsp low-fat milk, 2 tbsp chopped mixed nuts (almonds, cashewnuts, pistachio), 1 tsp ghee
How to make
First wash sweet potatoes. Cook in pressure cooker with enough water for 3 to 4 whistles. Peel and mash the sweet potatoes and keep aside. Now heat ghee in a pan and add the mashed sweet potatoes and cook well for 10 minutes. Add milk, sugar, cardamom powder and 1 tbsp of water. Cook on low heat 2 minutes ensuring that the mixture has little liquid remaining and not completely dry. Add saffron and nuts and mix well. Delicious halwa is ready to eat. Serve hot.
