How to make:-
To make golgappa
Take a big bowl. Mix sooji, maida,
baking soda and salt in bowl. To knead stiff dough, add little warm water.
Cover it with a damp muslin cloth and keep it aside for 30 mins. Now make small
equal lemon sized balls of the dough. Cover all balls with damp muslin cloth
while making more balls. With the help of some dry maida, roll out thin rotis. Now
take a round cookie cutter or lid of any container, cut small golgappas from
roti. Heat oil in a deep bottom pan and fry them with the help of a slotted
spoon. While frying, press them in the center allow them to puff up. Take them
out of oil tissue paper when they are light brown and crisp. Let them cool. Store
them in an airtight container.
To make pani
To make a fine paste of coriander,
mint leaves and green chillies, use hand blender. Mix imli pulp, roasted cumin
powder, cumin seed, kala namak, boondi, crushed jaggery in water along with
green paste. Dissolve the gur properly. Adjust the spices and tanginess
according to your taste. Keep in the refrigerator for 2 -3 hrs before serving.
To make stuffing
Take boiled yellow peas, roughly
mashed potatoes and salt in a bowl. Mix all the ingredients well. Keep aside.
Now you can enjoy homemade yummy
pani puri or golgappa or puchkas.
