Roomali Roti:-
Ingredients
2 cups wheat flour, 1/2 cup refined flour, salt to taste, water as required, wheat flour for dusting
How to make
In a large bowl, sieve wheat flour and refined flour together. Add salt and mix all the ingredients. Add water to make soft dough. Cover this dough with a damp cloth for 30 minutes. Knead it again. Divide the dough into 8-9 equal portions and shape them into round balls. Roll out each ball into small rounds on a floured wooden surfaced chakla. Hold this on the back of your palm and circle it twist it in an anticlockwise direction and swing it. Then again catch it on the back of the palm of the same hand. Keep repeating until the diameter of the same becomes about thirty centimeters. Take care to maintain round shape and even thickness of roti. Put these rotis on convex side of the wok. It will be cooked in a minute. Fold roti into quarters or sixes and served immediately.
