Bengali sweet Pulao:-
Ingredients
2 cups basmati rice (soaked for half an hour), 3 tbsp ghee, 2 bay leaves,4 green cardamom pods (broken), 1 cinnamon stick, 1/2 black cardamom, 1tbsp sugar, 1/2 tsp turmeric powder, 10 cashew nuts, 10 raisins, salt as per taste
How to make
First, heat ghee in a deep bottomed pan. When it is sufficiently warm, add cashew nuts and raisins to the ghee. Cook them for 2 minutes on low flame. Strain the dry fruits and keep them aside. Season the left-over ghee with bay leaves, cinnamon stick, green and black cardamom pods. Cook for half a minute and add sugar. Add turmeric and stir all the contents of the pan. Add rice in pan and fry for 2 minutes. Add salt to it. Now pour 3 cups of water, cover and cook on low flame for 10-12 minutes. Serve Bengali sweet Pulao with pickle.
