Instructions:
1.    Wash the rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
2.    Heat ghee or oil in a pan. Add cumin seeds, cloves, cardamom, cinnamon, and bay leaves. Sauté until fragrant.
3.    Add the sliced onions and sauté until golden brown.
4.    Add the diced vegetables and sauté for 5-7 minutes.
5.    Add the drained rice and sauté for another 2-3 minutes.
6.    Pour in 2 cups of water, add salt, and bring to a boil. Reduce the heat, cover, and let it simmer until the rice is cooked and the water is absorbed.
7.    Sprinkle garam masala and fluff the rice gently.
8.    Garnish with fresh coriander leaves before packing into the lunchbox.

2. Palak Paneer
Ingredients:
●    200 grams paneer, cubed
●    1 bunch spinach, washed and chopped
●    1 onion, finely chopped
●    2 tomatoes, pureed
●    2-3 garlic cloves, minced
●    1 teaspoon ginger, grated
●    1 green chili, chopped
●    1/2 teaspoon cumin seeds
●    1/2 teaspoon turmeric powder
●    1/2 teaspoon garam masala
●    1/2 teaspoon red chili powder
●    2 tablespoons cream or yogurt (optional)
●    Salt to taste
●    2 tablespoons oil or ghee
Instructions:
1.    Blanch the spinach in boiling water for 2-3 minutes. Drain and blend into a smooth puree.
2.    Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
3.    Add garlic, ginger, and green chili. Sauté for a minute.
4.    Add the chopped onions and sauté until golden brown.
5.    Add the tomato puree and cook until the oil separates.
6.    Add turmeric, red chili powder, and salt. Mix well.
7.    Stir in the spinach puree and cook for 5-7 minutes.
8.    Add the paneer cubes and simmer for another 5 minutes.
9.    Finish with garam masala and cream or yogurt (if using).
10.    Pack the palak paneer with a side of roti or rice.

3. Chickpea Salad
Ingredients:
●    1 cup boiled chickpeas
●    1 cucumber, diced
●    1 tomato, diced
●    1 onion, finely chopped
●    1 carrot, grated
●    1 green chili, chopped (optional)
●    2 tablespoons fresh coriander leaves, chopped
●    1 tablespoon lemon juice
●    1/2 teaspoon chaat masala
●    Salt to taste
●    1 tablespoon olive oil
Instructions:
1.    In a large bowl, combine the boiled chickpeas, cucumber, tomato, onion, and carrot.
2.    Add the chopped green chili and coriander leaves.
3.    Drizzle with lemon juice and olive oil.
4.    Sprinkle with chaat masala and salt. Mix well.
5.    Pack the chickpea salad in an airtight container.

4. Raita
Ingredients:
●    1 cup yogurt
●    1/2 cucumber, grated
●    1/2 carrot, grated
●    1 tomato, finely chopped
●    1/4 teaspoon roasted cumin powder
●    Salt to taste

1.    In a bowl, whisk the yogurt until smooth.
