Recipe to make Rice Idli

Ingredients
1/2 cup urad dal/split black lentils, 1 tbsp fenugreek/methi, 2 cups par-boiled rice /ukda chawal, 3 tbsp thick rice flakes/jada poha, salt to taste, oil (for greasing)
How to make
Take urad dal and fenugreek seeds along with water in a deep bowl. Now cover the bowl with a lid and keep it aside to soak for 4 hours. Now combine parboiled rice, thick rice flakes and enough water in a deep bowl. Cover this too with a lid and keep aside to soak for 4 hours.
After 4 hours, wash and drain soaked urad dal and fenugreek seeds and blend in a mixer to a smooth paste using approx. 1 cup of water. Transfer the mixture into a deep bowl and keep it aside. Now, drain the parboiled rice and thick rice flakes. Blend them in a mixer to a slightly coarse paste using 1 and 1/2 cups of water. Add this mixture to the urad dal- fenugreek seeds mixture, add salt and mix all ingredinets well. Cover this mixture with a lid and keep it aside to ferment for 12 hours.
When the mixture gets fermented then mix the batter again. Now grease the idli moulds with oil. Pour spoonfull of the batter into greased idli moulds. Steam in an idli steamer for 10 to 12 minutes or till they are cooked. Repeat with the remaining batter to make more idlis. Serve hot with sambhar, coconut chutney and malgapodi.
