How to make
For Chocolate Sponge
Take a small bowl and combine the instant coffee powder with 1/4 cup of warm water. Mix well. Now combine curd, oil and coffee-water mixture in a deep bowl. Mix well using a whisk to make curd mixture. Keep this aside. Sieve the plain flour, cocoa powder, baking powder, baking soda, sugar and salt in a deep bowl and then mix well. Add curd mixture and 2 tbsp of water and fold gently using a spatula. Grease tin with buterr. Now, pour the batter into a greased tin lined with butter paper and dusted with plain flour. Tap it slightly to even out the mixture. Preheat oven at 200 degree C or 400 degree F for 40 minutes and bake cake in it. Keep aside to cool completely.
For Chocolate Ganache
In a broad non-stick pan, heat the fresh cream. Cook on medium flame for 2 to 3 minutes while stirring occasionally. Now, switch off the flame. Add chocolate and wait for 2 minutes. Mix very well using a flat spoon till the mixture is smooth. Keep aside to cool completely.
How to Proceed
Now, demould the cake on a flat surface and cut into two equal parts horizontally. Sprinkle a little the sugar syrup on the inner side of both the cake halves. Spread little chocolate ganache on the lower half and spread it evenly using a palette knife. With the soaked part facing upwards, sandwich it with the other half of the cake and press it lightly. To cover the cake ,spread the remaining ganache evenly on top and at the sides of the cake with the help of a palette knife. Refrigerate for half an hour.
For Chocolate Decoration
Pour the melted chocolate in the piping bag. Cut the tip of the bag as per your requirement. Pipe out circular shapes on cake as seen in picture. Put some chocolate slices and chocolate sticks. Refrigerate for 30 minutes. Yummy Chocolate Truffle Cake is ready to enjoy. Cut into slices and serve it.
