Ingredients 
1 and 1/4 cups all purpose flour (plus more for rolling), 1 and 1/2 tsp unsweetened cocoa powder, 1/4 tsp baking soda, fine salt, 6 tbsp unsalted butter (softened), 1/2 cup + 2 tbsp sugar, 1 large egg yolk, 1 and 1/2 tsp red food colouring, 1 tsp pure vanilla extract, 2 pints ice cream (any flavour of your choice like vanilla, butter, strawberry, chocolate, pistachio)

How to make
In a bowl, sift all purpose flour, cocoa powder, baking soda and 1/8 tsp salt. In another bowl, beat butter and granulated sugar until combined. Add egg yolk and beat until it combines. Now, mix food colouring and vanilla extract and beat them. Gradually, add the flour mixture in this batter. Beat just until the dough comes together. Form the dough into two 1-inch-thick disks. Wrap them tightly in plastic and refrigerate until firm at least for 2 hours.

Now preheat oven to 350degree F. Line two baking sheets with parchment paper. Dust a sheet of parchment paper with flour. Unwrap one disk, place it on the paper and cover with a large sheet of plastic wrap. Now roll the dough out to 1/8 inch thick. Peel off the plastic wrap.

Use minimum 2 and 1/2 inch biscuit cutter to cut out the dough. Now place these cookies on the prepared baking sheets by leaving some space. Gather the scraps, chill until firm, roll again and cut. Repeat the whole process with the remaining disk.

Bake the cookies until brick-red. Let the cookies cool on the sheets for 3 minutes and then transfer them to a wire rack to cool completely. Line a rimmed baking sheet with parchment sheet. Now, place 1 portion of ice cream on 1 cookie and top with another cookie. Trim off any ragged edges of ice cream. Repeat with the remaining cookies and ice cream. Freeze them for at least 4 hours or overnight. Tasty ice cream sandwiches are ready to eat.
