Vada Pav is a beloved Indian street food that hails from the heart of Mumbai. Often referred to as the “Indian burger,” it consists of a spiced potato fritter (vada) tucked between a soft bun (pav) and is served with a variety of chutneys and green chilies for extra flavor. This simple yet flavorful snack has captured the hearts of many and is easy to recreate at home. Here's a step-by-step guide on how to make this delicious dish!
Ingredients:
For the Vada (Potato Fritters):
● 4 medium-sized potatoes (boiled and mashed)
● 1-inch ginger (grated)
● 3-4 cloves of garlic (minced)
● 2-3 green chilies (finely chopped)
● 1 teaspoon mustard seeds
● 10-12 curry leaves
● ½ teaspoon turmeric powder
● 1 tablespoon oil
● Salt to taste
For the Batter:
● 1 cup gram flour (besan)
● ½ teaspoon turmeric powder
● ½ teaspoon red chili powder
● A pinch of baking soda (optional for crispiness)
● Salt to taste
● Water (as needed)
For the Pav:
● 6 pav buns (soft dinner rolls)
● Butter for toasting the buns
For Serving:
● Tamarind chutney
● Green chutney
● Dry garlic chutney (optional, but highly recommended)
● Fried green chilies (optional)
Instructions:
Step 1: Prepare the Potato Filling
1. Heat 1 tablespoon of oil in a pan. Add mustard seeds and let them crackle.
2. Add curry leaves, grated ginger, minced garlic, and chopped green chilies. Sauté for a minute until fragrant.
3. Add turmeric powder and stir.
4. Now, add the boiled and mashed potatoes to the pan. Mix well, ensuring all the spices are evenly incorporated.
5. Season with salt and cook the mixture for 2-3 minutes, stirring occasionally.
6. Once done, let the mixture cool down slightly. Shape the mixture into small, round balls (about the size of a lemon) and set aside.
Step 2: Prepare the Batter
1. In a mixing bowl, combine gram flour, turmeric powder, red chili powder, and salt.
2. Add water gradually and whisk until you get a smooth batter with a slightly thick consistency. The batter should be thick enough to coat the potato balls evenly.
3. If you prefer extra crispy vadas, add a pinch of baking soda to the batter and mix well.
Step 3: Fry the Vadas
1. Heat oil in a deep pan for frying.
2. Once the oil is hot, dip each potato ball into the gram flour batter, ensuring it is evenly coated.
3. Gently drop the coated potato balls into the hot oil and fry until they turn golden brown and crispy on all sides. This should take about 4-5 minutes.
4. Remove the vadas from the oil and place them on a paper towel to drain excess oil.
Step 4: Toast the Pav
1. Slice the pav buns in half horizontally.
2. Heat a tawa (griddle) and add some butter.
3. Toast the pav buns on both sides until they turn golden and crisp.
Step 5: Assemble the Vada Pav
1. Take one half of the toasted pav and spread some tamarind chutney on it.
2. On the other half, spread the green chutney and dry garlic chutney (if using).
3. Place a fried vada in between the two halves of the pav.
4. Optionally, serve with fried green chilies for an extra spicy kick.
