Recipe: Delicious Paan ice cream

Ingredients
1 litre full fat milk, 1 and 1/2 cups
sugar, 1/4 cup cornflour, 300 gms fresh cream, 4 calcutta betel
leaves/paan, 6 dried dates (soaked overnight and finely chopped), 1 tbsp
powdered saunf, 1/4 tsp cardamom/elaichi powder, 1/4 cup
gulkand/sweetened rose petals, a pinch of menthol
How to make
First
wash paan leaves and grind them into a fine paste in a blender. Then
sieve juice through a strainer and keep it aside. Take dates, deseed
them and finely chop them. In a bowl, mix together the paan juice,
dates, saunf powder, cardamom powder and gulkand. Keep it aside.
Take
1/4 cup of cold milk and mix cornflour in it. Keep this aside. Now put
rest of the milk in a heavy bottomed pan and bring it to a boil. Add
sugar and put it on low flame for 5 minutes. Add dissolved cornflour and
cook for another 5 minutes while stirring continuously. Turn off the
flame and allow it to cool completely. Add the prepared paan flavouring
mixture and cream to the milk.
Mix well and pour into a shallow
dish. Freeze it till slushy. Take out from refrigerator and beat it with
a whisk until smooth and creamy. Add menthol and mix well. Freeze this
again until firm. Tasty delicious paan ice cream is ready to enjoy.
