Daal Bati Churma Rajasthani food is incomplete without
the mention of the famed Dal-Baati-Churma, a distinctive dish of the
state. A delicious, rich, flavorful and a whole meal in itself
consisting of three items; Baati - a hard, round whole-wheat
ball/roll, cooked in a tandoor oven or roasted over hot coals, served
after dipping in enormous amount of ghee (clarified butter). Dal - a thin curry of two or more lentils tempered with very less spices and more Ghee. Churma - prepared Baatis, crushed and cooked with ghee and sugar.
