1. Rinse the rice and moong dal together until the water runs clear.


2. In a large pot, heat some oil and add cumin and mustard seeds. Let them splutter.

4. Add the tomatoes, turmeric powder, and garam masala. Cook until the tomatoes soften.


5. Mix in the diced vegetables, rice, and dal. Pour in 3 cups of water and add salt to taste.


6. Bring to a boil, then reduce the heat, cover, and let it simmer for 20-25 minutes, or until the rice and lentils are cooked.

2. One-Pot Rajma Chawal

Rajma Chawal is a classic North Indian dish combining kidney beans and rice in a spiced tomato gravy. It's hearty, flavorful, and incredibly easy to make in one pot.

Ingredients:

- 1 cup basmati rice
- 1 cup rajma (kidney beans), soaked overnight and drained
- 1 onion, chopped
- 2 tomatoes, pureed
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala

1. In a large pot, heat some oil and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden.


2. Incorporate the ginger-garlic paste and cook for an additional minute.


3. Combine the tomato puree, turmeric, cumin, coriander powder, and garam masala. Cook until the masala separates from the oil.


4. Add the soaked rajma and rice to the pot. Pour in 4 cups of water and add salt to taste.


5. Bring to a boil, then reduce the heat, cover, and let it simmer for 35-40 minutes, or until the rajma and rice are cooked through.


6. Garnish with fresh coriander leaves and serve hot with a side of yogurt or pickles.
