Mexican Street Corn Salad, also known as Esquites, is a vibrant and flavorful dish inspired by the popular street food Elote. This creamy, tangy, and slightly spicy salad is perfect as a side dish for barbecues, tacos, or even as a standalone snack. Best of all, it comes together quickly and easily!

Ingredients:
●    4 cups corn (fresh, canned, or frozen)
●    1/4 cup mayonnaise
●    1/4 cup sour cream
●    1/2 cup crumbled cotija cheese (or feta)
●    1 jalapeño, finely chopped
●    1/2 teaspoon chili powder
●    1/2 teaspoon smoked paprika
