Mexican Street Corn Salad, also known as Esquites, is a vibrant and flavorful dish inspired by the popular street food Elote. Ingredients:
● 4 cups corn (fresh, canned, or frozen)
● 1/4 cup mayonnaise
● 1/4 cup sour cream
● 1/2 cup crumbled cotija cheese (or feta)
● 1 jalapeño, finely chopped
● 1/2 teaspoon chili powder
● 1/2 teaspoon smoked paprika
