Paneer dishes : Easily make at home

Methi Malai Paneer:-
Ingredients
For masala paste
2 medium onions (chopped), 1/4 cup tomatoes
(chopped), 1 inch ginger (chopped), 5-6 small garlic cloves (chopped), 2
chopped green chilies, 10-12 cashews (chopped), 1/2 tsp cumin seeds, 1 tbsp oil
For rest of the gravy
250 grams paneer cubes, 1 cup fresh
methi leaves/fenugreek leaves, 2 tbsp kasuri methi/dry fenugreek leaves, 1/4 tsp
turmeric powder/haldi, 1/2 tsp kashmiri red chili powder, 1/2 tsp coriander
powder/dhania powder, 1/2 tsp garam
masala powder, 1 cup water, 1/4 cup fresh cream, 2 tbsp oil, salt as required
How to make Heat 1 tbsp oil in a pan and add 1/2
tsp cumin seeds. Saute till the cumin seeds splutter. Now add more than 1 cup
of chopped onions. Cook it on medium flame till they become light brown. Now
add ginger, garlic, green chilies and 10 to 12 cashews (chopped). Stir till raw
aroma of ginger and garlic goes away. Add chopped tomatoes. Stir well and saute
tomatoes till they soften. Cool down this onion-tomato mixture and grind to a
smooth paste by adding water. Keep aside.
Rinse methi leaves very well in
water and chop them. Heat pan and add 2 tbsp oil and add finely chopped methi
leaves. Cook methi leaves till they wilt. Add turmeric powder, kashmiri red
chili powder and coriander powder. Mix them well. Now add onion-tomato paste
and cook on low flame on a low flame for 7 to 8 minutes. When oil starts
releasing from the sides, add water. Now add cream. Stir cream with the rest of
the methi masala gravy. Add paneer cubes and garam masala powder, sugar and
salt. Cook on a low flame till the paneer cubes are cooked. Serve methi malai
paneer garnished with some grated paneer with tandoori rotis, naan or chapatis.
