Navratri special: Lauki halwa recipe

Sweet indian dessert made from bottle gourd. bottle gourd is known as
lauki in hindi and dudhi in marathi. so this indian dessert is known by
the name lauki halwa or dudhi halwa.
Ingredients
500
gms bottle gourd (doodhi / lauki) , peeled and grated, 2 cups milk, 1
cup mava (khoya), 1 cup sugar, 5 tbsp ghee, 15 cashewnuts (kaju), 1/2
tsp cardamom (elaichi) powder, 2 tsp rose water
How to make
Heat
3 tbls ghee in a pan, add the cashewnuts and fry till golden brown.
Remove and keep aside. Add the bottle gourd to the same pan and saute on
medium flame for 2 minutes. Add the hot milk and keep stirring till it
reduces and become thick. Add the sugar, mix well and cook ,till it
reduces. Add the khoya , 2 tbsp ghee ,cashews and cardamom powder and
mix well. When the halwa is cooked and becomes thick, add the rose water
and mix well.

Cooking time: 45 mins
Makes 5 to 6 servings
