Mini Bajra Uttapam

Ingredients1/4 cup whole bajra (black millet),9 tbsp finely chopped onions,3/4 cup urad dal (split black lentils),1/2 cup rice,1 tsp green chilli paste,salt to taste,9 tbsp finely chopped capsicum,
chilli powder for sprinkling,3- 1/4 tsp oil for greasing and cooking, healthy green chutney.
Method1.Soak the whole bajra in enough water in a deep bowl for 8 hours. Drain well.
2.Combine the bajra with enough water in a pressure cooker and pressure cook for 5 whistles.
3.Allow the steam to escape before opening the lid. Drain and keep aside.
4.Wash and soak the rice and urad dal separately in a bowl for 3 to 4 hours. Drain well.
5.Combine the rice and urad dal with three and fourcup of water and blend in a mixer to a smooth paste to get a batter of thick pouring consistency.
6.Transfer the batter into a deep bowl, add the cooked bajra, green chilli paste, salt and one and four cup of water and mix well.
7.Heat and grease a mini non-stick uttapa pan using one and four tsp of oil.
8.Pour 2 tbsp of batter in each uttapa mould to make a 75 mm. (3) diameter round circle.
9.Sprinkle half tbsp of onions and haLF tbsp of capsicum and sprinkle a little chilli powder over each uttapa.
10.Cook all the uttapas, using 1 tsp of oil, till they turn golden brown in colour from both the sides.
11.Repeat steps 8 to 10 to make more mini uttapas.
12.Serve immediately with green chutney.
