How to make
For the bhallas
First, soak moong dal and urad dal in enough water for 2 hours. Grind them nicely in a food processor. Now make dal paste light and fluffy by whisking them together. Add zeera and chironji. The batter is ready. Now heat oil in a kadhai. Wet your palms and drop small portions of batter into hot oil. Deep fry the bhallas till golden brown.
For the green chutney
Take coriander leaves, mint, green chilli, ginger, black salt and salt in a mixer and grind them together. Now add garam masala and lemon juice and mix them. Green chutney is ready.
For the meethi chutney
Soak the tamarind pulp in water for 30 minutes. Then squeeze the soaked tamarind with your hands to extract all the pulp. Strain and throw away the residue in the strainer. Add tamarind water in a saucepan and add sugar. Cook on low heat till the sugar dissolves. Let it cool. Now add kachri powder, saunth powder, degi mirch, salt, black salt and garam masala. Meethi chutney is ready to eat.
For the dahi
Take yogurt and add powdered sugar. Whisk them together. Keep it in the fridge to cool.
For the chaat masala
Mix peeli mirch, kali mirch, zeera powder and garam masala together.
How to serve
Place 5-6 bhallas in a plate. Now add sweetened curd, green chutney and meethi chutney. Sprinkle some chaat masala on it. Garnish bhallas with pomegrante and sev. Delicious Dahi bhallas are ready to serve.
