How to make
For the paapri
Take maida, salt and ajwain in a bowl. Mix them. Add oil in maida and knead flour using water. Now make small balls from dough. Roll them like a chapati. Heat oil in a kadhai. Fry these paapris till golden brown on low heat.
For the green chutney
Take coriander leaves, mint, green chilli, ginger, black salt and salt in a mixer and grind them together. Now add garam masala and lemon juice and mix them. Green chutney is ready.
For the meethi chutney
Soak the tamarind pulp in water for 30 minutes. Then squeeze the soaked tamarind with your hands to extract all the pulp. Strain and throw away the residue in the strainer. Add tamarind water in a saucepan and add sugar. Cook on low heat till the sugar dissolves. Let it cool. Now add kachri powder, saunth powder, degi mirch, salt, black salt and garam masala. Meethi chutney is ready to eat.
For the dahi
Take yogurt and add powdered sugar. Whisk them together. Keep it in the fridge to cool.
For the chaat masala:
Mix peeli mirch, kali mirch, zeera powder and garam masala together.
How to serve
Arrange 5-7 paapris on a plate. Break them a little from the middle. Pour sweetened curd, green chutney, meethi chutney. Sprinkle some chaat masala.
Then garnish with pomegrante and sev. Serve delicious Paapri chat.
