Paneer dishes : Easily make at home

Shahi Paneer:-
Ingredients
200 gms paneer, 1 and 1/2 cups water, 1/2 cup full fat curd/dahi (whisked),
1 -2 tbsp full fat cream, 1 tsp coriander powder/dhania powder, 1/2 tsp red chili
powder, 1/4 tsp turmeric powder, 1/4 tsp garam masala powder, 1/4 tsp cardamom
powder, pinch of saffron/kesar, salt and sugar as required
For paste
1 medium sized onion (roughly
chopped), 2 tbsp chopped cashews, 1 tbsp almonds, 1 tbsp magaz or melon seeds,
3-4 garlic (chopped), 1 inch ginger/adrak (chopped), whole spices or garam
masala- 1 bay leaf/tej patta, 2-3 cloves/laung, 2-3 green cardamom, 1-2 black
cardamom/badi elaichi, 1 inch cinnamon/dal chini, 1/2 tsp shah jeera/caraway
seeds, 2-3 tbsp oil or ghee or butter
How to make
Boil onions, cashews, almonds, melon
seeds, ginger and garlic in 1 and 1/2 cups
water for 8-10 minutes till onions
become soft. Strain stock and keep aside. Make a paste of the cooked onions,
ginger and garlic along with the dry fruits by adding 1 or 2 tsp of the
strained water. Now heat oil in a pan and fry all garam masala till they
release their aroma in the oil. Now add paste of onion and dry fruits. Fry it
till oil starts to leave the sides of the paste. Add dhania powder, red chili
powder, turmeric powder, and stir. Add whisked curd, vegetable stock, salt and
sugar. Cook it till the gravy thickens slightly on a low flame. Add cardamom
powder and crushed saffron. Now add cubed paneer and whisked cream in pan. Let
the paneer gets cooked. Garnish shahi paneer with some coriander leaves. Serve
shahi paneer with jeera rice or rotis, naan or phulkas.
