Make mouth-watering Jalebi with Rabri at home

For Jalebi:-
Ingredients
1 cup maida/purpose flour, 2 tbsp corn flour, 3/40 cup sour yogurt, 1/2 tbsp baking powder, 2 tbsp ghee, edible yellow colour, ghee for frying, sliced almonds or pistachios (for garnish)
For sugar syrup
1 cup sugar, 1 cup water, a few strands of saffron
How to make
First mix maida, corn flour, baking soda, ghee and edible yellow colour in a medium bowl. Mix all the ingredients well. Now add yogurt to ingredients. Make a thick batter by adding little water and blend them. Keep the consistency of batter thick. Now cover jalebi batter and place it in a warm place for overnight. Stir the batter again. Now make sugar syrup. On medium heat, boil sugar with water and saffron powder in a small bowl. Make sugar syrup of one string consistency. Turn off the heat and keep it aside.
To make jalebis, preheat ghee for deep frying. Once ghee is hot enough start filling piping bag with batter. Now pipe spirals of batter onto the hot ghee, until you get atleast 3 concentric circles. Fry the jalebi on medium heat until golden brown in colour and crisp. Drain the excess ghee out and immediately dip jalebid into hot sugar syrup. Jalebis should rest in the sugar syrup for at least2-3 minutes. Now drain out excessive sugar syrup. Garnish these jlaebis with sliced almonds or pistachios.
Serve these crispy delicious Jalebis with yummy Rabri to your friends and family. You can serve Rabri hot or cold as per your wish.
