Make market like Hot and Sour Soup at home
Ingredients
4-6 French beans (chopped), 1/2 medium carrots (grated), 1 medium bamboo shoots (chopped), 1/4 cup bean sprouts, 1/4 small cabbage (shredded), 2 medium mushrooms (chopped), 1/2 medium green capsicum (chopped), 2 tbsp oil, 1 small onion (chopped), garlic (chopped), 2-3 cloves, 2 inch stalk celery (chopped), 1 inch piece ginger (grated), 2 tbsp soya sauce, 2 tbsp green chilli sauce, 4-5 cups vegetable stock, salt, 1/2 tsp sugar, 1/2 tsp white pepper powder, 3 tbsp cornflour starch, 2 tbsp vinegar, 1 stalk spring onion greens finely (chopped), 1 tbsp chilli oil
How to make
In a deep pan, heat oil. Now add onion, garlic, celery and ginger. Fry all the vegetables for a minute. Add bamboo shoot in pan and stir. Now add French beans, carrot, bean sprouts and cabbage. Saute them for 2-3 minutes. Add mushrooms and continue to cook. After this, add soya sauce, green chilli sauce and vegetable stock. Mix all the ingredients. Add green capsicum, salt and sugar and stir them in pan. Now sprinkle white pepper powder and mix. Keep stirring. Meanwhile, take cornflour and mix in little water. Pour this cornflour water in pan and cook till soup thickens. Add vinegar and stir. Soup is ready. Pour into soup bowls. Garnish with spring onion greens, drizzle a little chilli oil. Serve it hot.
