Make Gujarati delight Mohanthal at home

Ingredients
4 cups gram flour, 2 and 1/4 cups ghee, 1/4 cup milk, 1tbsp
cardamom powder, 1/2 cup finely chopped almonds and pistachios
for sugar
syrup
2 cups sugar, 1 and 1/2 cups water
How to make
Start with greasing a thick bottomed plate/thal with ghee
and set aside. Take gram flour in large bowl and add 1 and 1/2 cups of ghee. Combine
well with fingers to make a mixture like coarse crumbs. Add milk to mixture and
rub between palms to combine well. In sauce pan, heat 2 cups of sugar and 12
cups sugar, 1 and 1/2 cups water simmering it until it reaches a two thread
consistency. Remove sugar syrup from heat and keep it warm. Now heat remaining
ghee in a large sauce pan and add the above flour mixture. Keep stirring it until
golden brown and releases a roasted aroma about 7 to 10 minutes. Stir in nuts
and cardamom until combined. Gradually add sugar syrup in mixture. Keep
stirring till the mixture thickens and leaves the sides of the pan. Turn off
heat and transfer the Mohanthal mixture into greased thal. Cut Mohanthal into
squares with knife and allow it to cool. When it gets cool completely and separate
pieces. Garnish with almonds and pistachios and serve.
