Make delicious Matara Kulchas easily at home

Ingredients
2 cups matar, salt to taste
For tempering
1 and 1/2 tsp black salt, 2 tsp roasted cumin seeds, 1/2 tsp amchur powder, 2 tsp coriander powder/
dhaniya, 1/4 tsp red chilli powder, salt to taste, 2 tbsp oil
For
assembling

medium onion (chopped), 1 medium tomato (chopped), 1/2 cup green chutney, 1/2 cup
tamarind chutney, 1 medium green chilli (chopped), 1 tbsp cilantro leaves (chopped), 1 tbsp red chilli powder, 2 tbsp gram flour sev, 1 tsp chaat masala
How to make
For 3-4 hours, soak matar in hot
water. Now add salt and cook for 9-10 whistles.
Allow them to cool down and set them aside. Heat oil in a pan, add cooked
matar. And black salt, roasted cumin seeds, amchur powder, coriander powder, red chilli powder and salt. Carefully toss them around till matar are coated with
spices. Now before serving matar to anyone garnish them. Take matar in a bowl
or plate. Sprinkle chopped onion and tamarind chutney. Now add coriander
chutney, chopped tomatoes, chopped green chilli, red chili powder, chopped
cilantro leaves and sprinkle some sev. Now sprinkle chat masala.
