Make delicious Kashmiri Pulao at home

How to make
In a pan, heat ghee on a low or
medium flame. Take a bowl and dissolve saffron strands with water. Now add dal
chini, shahjeera, laung, choti elaichi, badi elaichi and tej patta. Fry all the
whole spices till the ghee becomes fragrant. Now reduce the flame and add
saunth and fennel/saunf in it and fry. Add soaked and drained basmati rice. Now
add crush saffron dissolved in water and fry for a minute. Now pour water and
salt and stir. Use a lid to cover the pan tightly.
When the rice is cooking, prepare
the garnish. In a frying pan, heat oil add the sliced onions. Now add a pinch
of salt and fry the onions till they get golden. In the same oil, first fry the
almonds till they get crispy then fry the cashews and walnuts. Cook the rice
till all the water is absorbed. When rice is cooked, fluff it. Garnish kashmiri
pulao with the fried onions and dry fruits. Serve Kashmiri pulao hot.
