Ingredients
For Malai Rolls
6 cups full cream
fresh milk, 1 tsp cardamom powder, 2 tbsp mava, 1/2 cup mixed nuts
(almonds, cashew, pistachios), 1/2 gm saffron
For Rabri
4 cups fresh milk, 1 tsp cardamom powder, 1/3 cup sugar, pinch of saffron (soaked in milk)
How to Make
For Malai Rolls
Take
a thick bottomed kadhai and boil milk in it. Now simmer the gas. When
malai (cream) comes up on the milk pick it up with the help of a big
fork or sharp edged knife, and spread it around the edges of the kadhai.
Repeat the same with all malai of the milk. When a little amount of the
thick milk remains in the bottom of the kadhai then remove thick layers
of the malai from the kadhai carefully and keep it in a dish.
For Rabri
Now
boil milk in a pan. Keep boiling it on low flame till it gets thick.
When milk remains 1/3 then add sugar in it. Stir well and boil for few
minutes again. Soak saffron in warm milk and mash properly. Pour saffron
milk and cardamom powder in Rabdi. Let it cool.
How to proceed
Begin
with crumbling mava with fingers and add a little sugar to it. Mix
nuts, cardamom powder, crushed saffron leaves, soaked saffron strands in
mava well. This will be used as stuffing. In a plate, spread malai
layers and fill a little stuffing. Fold and roll it like cylinder. Keep
aside. Prepare all malai rolls like this. Now in a transparent dish put
white malai rolls. Pour cold rabri over them. Delicious Malai rolls are
ready to eat.
