Learn to make sweet of Punjab: Doda Barfi

Ingredients
4 cup milk, 1and 1/2 cup heavy cream, 1and 1/2 cup sugar, 3 tbsp dalia/cracked wheat, 3 tbsp clarified butter or ghee, 1 cup crushed cashews, 1 cup crushed almonds, 1 tsp cocoa powder, 2 tbsp sliced pistachios for the garnish
How to make
Take a small pan and heat 2 tbsp of ghee. Roast the cracked wheat ghee over medium heat, till it turns brown. Keep it aside. Take a heavy-bottomed pan. Now heat milk and heavy cream in pan over medium heat. Boil till mixture thickens and keep stirring occasionally and scrape the milky residue that accumulates on the sides. Add roasted cracked wheat and sugar. Mix well. Keep cooking for 20 more minutes. Stirring occasionally and scraping the sides. Add cocoa powder and mix well. Add 1 tbsp ghee, cashews and almonds. Stir continuously till mixtures has become like soft dough and start leaving the sides of the pan. Now transfer the Doda mixture to a 12-inch plate. Cut it into square about half inch thick. Sprinkle some cashews, almonds and pistachios over Doda and lightly press them in. Enjoy the delicious Doda barfi. You can store it for 10 days too.
