Learn to make Crispy Dosa easily

Ingredients
1/2 cup parboiled rice, 1/2 cup urad dal, pinch of salt, 1/2 cup refined oil, 1 medium onion (thinly sliced)
How to make
First, soak urad dal and rice for 5-6 hours. Drain water and make a fine paste of these ingredients by adding little water. Now add pinch of salt in paste and mix all ingredients well. Keep the consistency of batter normal. Allow the mixture to ferment for about 6-7 hours. Heat a non-stick flat tava for 10 minutes on a low flame. Pour one tsp of oil on the tava. Spread the oil evenly with a thinly sliced onion. Onion is used enhance the non-stickiness to the tava. Sprinkle little water so that excess heat is absorbed. Now, use a flat bottomed bowl and spread the batter on the tava with it. Begin from the centre and go on spreading till you think it is even and has spread itself properly. Use oil to cook and keep it on medium flame. When it becomes golden in colour, take a thin wooden spatula and instead of flipping it just roll it over from one end to the other. Crispy Dosa is ready to eat. Serve hot with sambhar and coconut chutney.
