Learn to cook yummy Manchow Soup at home

Ingredients
For vegetable stock
1/2 cup cabbage (roughly chopped), 1/2 cup carrots (roughly chopped), 1/4 cup celery (chopped), 2 tbsp spring onions (chopped), 3-4 cauliflower florets
For soup
4 cups vegetable stock, 2 tbsp oil, 1 tbsp garlic (finely chopped), 1 tbsp ginger/adrak(finely chopped), 1 tsp green chilies (finely chopped), 2 tbsp cabbage (finely chopped), 2 tbsp cauliflower (finely chopped),
2 tbsp capsicum (finely chopped), 2 tbsp carrots (finely chopped), 2 tbsp tomatoes (finely chopped), 1 tbsp mint leaves (finely chopped), 1/2 tbsp coriander leaves (finely chopped), 2 tbsp cornflour dissolved in 1/2 cup, salt to taste, 1 tbsp soy sauce, 1/4 tsp black peppercorns (kalimirch) powder

How to make
Take a kadhai and heat 6 cups of water. Now add all the vegetables and boil on medium flame for 15-20 minutes. Let the vegetables to settle at the bottom of the vessel and pour out the vegetable stock. Discard the vegetables and keep aside. Now heat oil in a wok on high flame till it smokes. Add garlic, ginger and green chillies in oil and saute on high flame for few seconds. Add all chopped veggies like cabbage, cauliflower, capsicum, carrots. Fry on high flame for 2 minutes. Add tomatoes, mint leaves and coriander leaves. Cook them on high flame for 1 minute. Add vegetable stock. Mix well and cook on high flame for 2-3 minutes, while stirring occasionally. Add salt and soya sauce. Mix well and cook on high flame for another 2 minutes, while stirring occasionally. Add the prepared cornflour-water mixture in kadhai and keep cooking on high flame for 2 more minutes. Add pepper powder and mix well. Serve yummy Manchow soup topped with fried noodles.
