How to make:-
For gattas
Take bengal gram flour, chilli powder, saunf, ajwain, curd, oil and salt in a deep bowl. Knead stiff dough for gatta using little water. Now divide dough into 8 equal portions and shape each portion into long thin cylindrical roll. Now cut the rolls into 10 to 12 equal pieces and keep aside. In a pot, boil plenty of water and cook the gattas in boiling water for 5 to 7 minutes. Drain and keep aside. Now heat oil in a kadhai. Deep-fry gatta pieces till they turn light brown in colour from all the sides. Turn off gas and drain on an absorbent paper and keep aside.
Final preparation
First, make a smooth paste using garlic, chopped green chillies, pieces of adrak, sliced onions and water. Take oil in a deep non-stick pan and heat it. Add cardamom, cloves, cumin seeds, mustard seeds and asafoetida and cook on medium flame for 30 seconds. Add cook the prepared paste for 2 minutes. Add the cooked rice, deep-fried onions, prepared gattas, chilli powder, turmeric powder, garam masala and salt. Mix well and cook on medium flame for 2 minutes, while stirring occasionally. Serve immediately garnished with coriander.
