Kesar Coconut Barfi recipe

Ingredients
1 tsp ghee, 3/4 cup fresh coconut (thinly grated), 5 tbsp powdered sugar, 2 tbsp mava (crumbled), 1 tsp milk, 7 saffron/kesar strands soaked in one tsp of milk, a few drops of yellow food colour, grated pistachios and almonds (for garnish)
How to make
Take ghee and coconut in a microwave-safe bowl. Microwave on high for 1 minute. Now, add powdered sugar and mix well. Then microwave on high for 2 minutes and stirring once in between. Add mava, milk, saffron-milk mixture and yellow food colour. Mix well and microwave on high for 2 minutes. Transfer the mixture into a greased tin and spread it using the back of a spoon into an even layer. Delicious Kesar Coconut Barfi is ready. Refrigerate for at least an hour and cut into equal pieces. Serve chilled garnished with grated pistachios and almonds.
