How to make Vegetable Bonda

How to make:-
For stuffing
Boil potatoes in a cooker and peel off the skin and mash it well. Now wash carrots, beans, raddish, coriander leaves and finely chop them. Now put chopped veg in pressure cooker. Add little water cook for one whistle or till the vegetables get cooked. Drain water from cooked vegetables and keep aside. Take a kadhai and heat oil. Add cumin seeds and sliced cashewnuts and fry them. Add ginger garlic paste and saute for few more seconds. Now add turmeric powder, chilli powder, coriander powder, salt and chopped coriander leaves. Mix them well. Now add cooked vegetables and stir well. Now turn off gas and add lemon juice. Add this veg mixture to mashed potato and mix well. Add bread crumbs and mix well. Stuffing is ready.
For covering
In a mixing bowl, take besan flour. Add red chilli powder, hing, turmeric powder, cooking soda and salt. Add water and make a smooth batter.
Make bonda
Heat oil in kadhai. Make small balls from prepared vegetable stuffing. Wrap balls in batter. In kadhai, drop balls gently when oil is hot. Deep fry bondas till they turn golden brown. Healthy and tasty vegetable bondas are ready. Serve hot with hara dhaniya chutney, sauce or coconut chutney.
