How to make delicious Falafel at home

Ingredients
2 cups dried chickpeas, 1/2 tsp baking soda, 1 cup fresh parsley leaves (stems removed), 3/4 cup fresh cilantro leaves (stems removed, 1/2 cup fresh dill (stems removed), 7 garlic cloves (peeled), salt to taste, 1 tbsp black pepper (ground), 1 tbsp cumin (ground), 1 tbsp coriander (ground), 1 tsp baking powder, 2 tbsp sesame seeds (roasted), vegetable oil for frying
Fixings for sandwich
pita pockets, hummus, english cucumbers (chopped or diced), tomatoes (chopped or diced), baby arugula, pickles
How to make
Soak dried chickpeas in water overnight and add baking soda. Next morning, drain the chickpeas completely and pat them dry. In food processor, grind fresh leaves of parsley and cilantro. Now add chickpeas, garlic, salt, black pepper powder, cumin powder and coriander powder. Run food processor until all ingredients are combined forming a smooth falafel mixture. Transfer the falafel mixture into a container and cover tightly. Refrigerate for at least 1 hour. Add baking powder and sesame seeds to the falafel mixture and mix well before you fry. Wet hands with water and form the patties of falafel mixture at least half inch in thickness each. Take oil in saucepan. Heat oil on medium-high and drop the falafel patties in the oil. Fry them until they get medium brown. Place the fried falafel patties in plate lined with paper towels to drain. Assemble the falafel patties in pita bread with hummus, arugula, tomato slices and cucumbers. Serve falafel in small plates and enjoy.
