Tamales are a beloved traditional Mexican dish, perfect for family gatherings and celebrations. These homemade tamales feature a deliciously spiced chicken filling wrapped in soft, fluffy masa and steamed to perfection. Though they take some time to prepare, the result is well worth the effort!

Ingredients:
For the Masa:
●    3 cups masa harina
●    2 1/2 cups chicken broth (warm)
●    1/2 cup lard or vegetable shortening
●    1 teaspoon baking powder
●    1 teaspoon salt

For the Spicy Chicken Filling:
●    2 cups cooked shredded chicken
●    1 tablespoon vegetable oil
●    1/2 cup diced onion
●    2 cloves garlic, minced
●    1 cup red enchilada sauce
●    1 teaspoon cumin
●    1 teaspoon chili powder
●    1/2 teaspoon smoked paprika
●    Salt and pepper to taste
Additional Ingredients:
●    12-15 dried corn husks, soaked in warm water for 30 minutes

Instructions:
1.    Prepare the Filling: In a pan, heat the vegetable oil over medium heat. Sauté the onion and garlic until soft. Add the shredded chicken, enchilada sauce, cumin, chili powder, smoked paprika, salt, and pepper. Stir well and simmer for 5 minutes. Set aside to cool.

2.    Make the Masa Dough: In a large bowl, beat the lard or shortening until fluffy. Gradually add the masa harina, baking powder, salt, and warm chicken broth, mixing until a soft dough forms.

3.    Assemble the Tamales: Lay a soaked corn husk flat. Spread 2 tablespoons of masa evenly, leaving space at the edges. Place 1 tablespoon of the spicy chicken filling in the center. Fold the sides over the filling and then fold up the bottom.

4.    Steam the Tamales: Arrange tamales upright in a steamer basket. Steam for about 60-90 minutes, or until the masa easily pulls away from the husks.

5.    Serve and Enjoy: Let the tamales rest for 10 minutes before serving. Enjoy with salsa, sour cream, or guacamole!

Tips for Success:
●    Use a stand mixer to whip the masa for a lighter texture.
●    Add jalapeños for extra spice.
●    Make in batches and freeze for later enjoyment.
