Orange ricotta pancakes!!Orange ricotta pancakes with barley flour make for a low-calorie fluffy pancake breakfast. Adding orange zest and ricotta cheese just adds extra flavor, while using skim milk helps to reduce fat.

Ingredients: 1 cup barley flour
1/3 cup all-purpose flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1 cup part skim milk ricotta cheese
1/2 cup 2% milk
1/2 cup orange juice
1 tsp orange zest (grated orange peel)
2 large eggs, beaten
3 Tbsp butter, melted
1 tsp vanilla
Preparation:In a large bowl, combine barley and all-purpose flours, sugar, baking powder and baking soda; set aside.In another large bowl, beat together ricotta cheese, milk, orange juice, orange zest, eggs, butter and vanilla.
Mix liquid ingredients into dry ingredients just until well blended. Do not over mix.
Heat griddle or frying pan until hot. Spray with non-stick cooking spray. Spoon about 3 tablespoons batter onto griddle. Cook pancake until bubbles appear. Turn and cook until golden brown.
