Gujarati Snack Recipe: Khandvi

Ingredients
1 cup besan/bengal gram flour, 1 cup fresh curd mixed with 1and 1/2 cups of water, 2 -3 drops of lemon juice, 2 tsp ginger-green chilli paste, 1/4 tsp turmeric powder/haldi, a pinch of asafoetida/hing, salt to taste, 1/4 tsp oil, 1/4 tsp asafoetida/hing
For Filling
2 tbsp coconut (freshly grated), 1/2 tsp green chilies (finely chopped)
For Tempering
6 curry leaves/kadi patta, 2 tbsp coriander/dhania (finely chopped), 1 tsp mustard seeds, 3 tsp oil, coconut (grated)
How to make
In a bowl, take besan, curd-water mixture, lemon juice, ginger-green chilli paste, turmeric powder, asafoetida and salt. Mix well to make a smooth batter leaving no lumps. Cook on a slow flame while stirring continuously till it becomes thick (8-10 minutes). Now grease two thalis on the reverse side using 1/4 tsp of oil. Turn off gas and spread a spoonful of the batter on both the greased thalis. Spread it evenly. Wait for a few seconds and spread grated coconut and green chillies on the batter. Cut the spread vertically and start rolling it up. Make rolls from them. Arrange all the rolls in a plate. For tempering, heat oil in pan. Add the mustard seeds. When the seeds crackle, add curry leaves and and saute on a medium flame for a few seconds. Pour the tempering over the khandvis. Delicious khandvis are ready. Serve immediately garnished with coconut and coriander.
