In these frizzing winters soups can be a replacement of your lovers hug, Here is EASY recipe of green pea soup which can kill your cold shivering for sure.
Prep. Time: 15 mins.
Cooking Time: 20 mins.
Servings: 4-5
Ingredients:3 tablespoons fresh ginger, finely chopped
10 garlic cloves, peeled and crushed
2 green chilies, chopped finely
1 medium onion, chopped
4 1/2 cups of vegetable stock or plain water
500 g fresh or frozen peas
1 fresh lemon juice
1/4 teaspoon ground cumin
3 tablespoons ghee or oil
2 bay leaves
8 fresh mint leaves
salt to taste
Method:Puree the ginger, garlic, chilies, cumin and three tablespoons of water into a paste.
Place a large saucepan over medium-high heat and add the ghee or oil. Once the ghee is hot, add the bay leaves and saute for about 30 seconds. Stir in the onion and cook for a few minutes, until it the onions become transparent and start taking on a bit of color.
Once the onions are brown stir in the garlic-ginger paste and cook for another minute then carefully add the vegetable stock or water, stir well, and bring to a boil.
Then add the peas and let it simmer until the peas are bright and cooked through - just a couple minutes. Once the peas are done remove from heat and take out the bay leaves
Add salt, and puree the cooked mixture well. If the soup is thick the you can add more vegetable stock or water.
Serve hot topped with a bit of lemon juice, a pinch of cumin, mint leaves, and pan-fried cottage cheese or grated cheese.
