Ukadiche Modak:-
Ingredients
For outer modak
covering
1
cup rice flour, 1 and1/2 cups water, 1/2 tsp ghee, pinch of salt
For inner sweet
filling
1
cup fresh coconut (grated), 3/4 cup jaggery (powdered or grated), 3-4 powdered cardamoms,
pinch of nutmeg powder, 1/2 tsp poppy seeds/khus khus, 1 tsp ghee, 1 tsp nutmeg
powder
How to make
For sweet filling
Heat
ghee in a pan. Now, add khus khus, cardamom powder and nutmeg powder. Cook it
for a minute. Add grated fresh coconut and jaggery (powdered or grated) Mix
ingredients well. Cook this on a low flame. The jaggery will melt first and
stir it. Cook this mixture till the moisture from jaggery begins to dry. Switch
off the flame. Keep this coconut-jaggery filling aside.
For
outer cover
Take
water, oil and salt in a pan. Put it on stove. Let mixture come to a boil. Reduce
the flame and add the rice flour gradually. Stir and mix all rice flour with water.
Turn off gas and then cover this pan with a lid for 4-5 minutes. Take all dough
in a plate. Gather it and begin to knead it.Apply some water on your palms and
knead the dough soft. Make small balls from the dough with your palms. Dough balls
should be smooth in appearance and should not have any cracks.
Assembling
& shaping modaks
Keep water for steaming in a pan before start
shaping the modaks. Grease the steamer lightly with ghee. Take a ball and
flatten it with your fingers to a round disc. Place the modak filling in the
center. Bring together all the edges and join them. Remove the extra portion of
the dough from the top and taper the top of the modak with your fingers. Keep them
in a steamer pan. Cover pan with a lid and steam for 10 to 15 minutes on a low
flame. Once ukadiche modaks are steamed, drizzle a few teaspoons of ghee on the
modaks. Offer ukadiche modaks to lord Ganesha.
