How to make
For kachori
In a large bowl, take whole wheat flour, semolina, bengal gram flour and salt. Knead semi soft dough using water. Now divide the dough into equal portions. Roll out each portion into little thick big puris using little flour for rolling. Meanwhile, heat oil in a kadhai at a high flame and deep-fry the puris till crispy and light brown in colour. Put them on absorbent paper and keep aside.
For filling
Take moong, moath, potatoes and salt in a bowl and mix them well. Divide the mixture into equal portion and keep it aside.
How to assemble
Take a kachori. Make a hole in the center of the kachori and put one portion of the filling in it. Now top it with little curd, sweet tamarind chutney, green coriander chutney, chilli powder, roasted jeera powder and black salt. Sprinkle some pomegranate seeds and sev on top and serve yummy Raj Kachori.
