Ingredients

1 and 1/2 cups semolina/rava, 1/2 cup curd/dahi, 1 and 1/2 tsp green chilli paste, 2 tbsp oil, salt to taste, 1 and 1/2 tsp fruit salt, 1 tsp mustard seeds,1 tsp sesame seeds/til, 1/4 tsp asafoetida/hing, 1 tbsp chopped coriander/dhania (finely chopped)

For Serving

green chutney, tomato ketchup

How to make

In a deep bowl, take semolina, curd, green chilli paste, 1 tbsp oil, salt and 1and1/2 cups of water.  Mix well all the ingredients and cover with a lid. Keep this aside for half an hour. Now prepare the steamer by adding water in it and boil. When steamer is ready, add the fruit salt and 2 tsp of water in batter of dhokla. When the bubbles form, mix gently. Pour the batter immediately into a greased thali and shake the thali clockwise to spread the batter in an even layer. Steam batter in a steamer for 12 minutes. Take dhokla out and allow it to cool. When they get cool, cut into squares pieces. Now, heat the remaining 1 tbsp of oil in a small non-stick pan. When it gets hot then add mustard seeds, sesame seeds and asafoetida and fry on medium flame for 30 seconds. Pour the tempering over the dhoklas, sprinkle the coriander evenly over it. Rava dhoklas are ready to eat. Serve it immediately with green chutney and tomato ketchup.
