Easy recipe to make delicious Khandvi

1and 1/4 cups gram flour/besan, 1 cup yogurt, 1 inch ginger, 2 green chillies, 4 tbsp oil, salt to taste, 1/2 tsp turmeric powder, 1 tsp sugar, 1 tbsp lemon juice, 2 tbsp oil, 1 tsp mustard seeds, 2 tsp coconut scraped, few fresh coriander leaves (chopped)
How to make
First sieve besan and keep it aside in a bowl. Now make a paste of ginger and green chillies by grinding them. Take few thalis and grease them with ghee on reverse side. You can grease marble table top with a little oil. Using half cup of water, make buttermilk from yogurt. Take a besan, ginger-green chilli paste, salt, sugar, turmeric powder, lemon juice and buttermilk in a bowl and mix them well leaving no lumps. Take a thick bottomed pan and cook this mixture in it. Keep stirring continuously till it becomes a smooth thick batter with one string consistency. Spread portions of the mixture over the greased inverted thalis or marble table top as thinly as possible while the batter is still hot. Now spread scraped coconut over it. As it cool, cut into strips two inches wide and roll them tightly. Now heat oil in pan and add mustard seeds. When they splutter, pour over the pieces. Serve garnished with scraped coconut and chopped coriander leaves. Serve yummy Khandvi with green chutney or tomato ketchup.
