3.    Remove from heat and stir in the powdered sugar until well combined.
4.    Add the eggs, egg yolks, and vanilla extract, mixing thoroughly.
5.    Gently fold in the flour and salt until just combined.

●    3 large eggs, separated
●    1/4 cup granulated sugar
●    1 cup heavy cream

Instructions:
1.    Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool slightly.
2.    In a separate bowl, beat the egg yolks with half of the sugar until thick and pale.

4.    In another bowl, beat the heavy cream with the vanilla extract until soft peaks form.
5.    In a separate, clean bowl, beat the egg whites with the remaining sugar until stiff peaks form.
6.    Gently fold the whipped cream into the chocolate mixture, then carefully fold in the beaten egg whites until no streaks remain.
7.    Spoon the mousse into serving glasses and refrigerate for at least 2 hours, or until set.
8.    Garnish with fresh berries and mint leaves before serving.

3. Rich Chocolate Truffles
Ingredients:
●    1/2 cup heavy cream
●    8 oz dark chocolate, finely chopped
●    1 tsp vanilla extract
●    Cocoa powder, chopped nuts, or shredded coconut for coating

Instructions:
1.    Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
2.    Place the chopped chocolate in a heatproof bowl and pour the hot cream over it. Let sit for 2 minutes, then stir until smooth and glossy.
3.    Stir in the vanilla extract.
4.    Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until firm.
5.    Using a small spoon or melon baller, scoop out the chocolate mixture and roll into small balls.
6.    Roll each truffle in cocoa powder, chopped nuts, or shredded coconut to coat.
7.    Store in an airtight container in the refrigerator until ready to serve.
