Ingredients
For chapati
2 cups maida/refined flour, 1 tsp salt yogurt (to knead the dough), dry flour for rolling, 1/2 cup cabbage (shredded), 4 tbsp mint leaves (chopped), 4 tbsp green chutney, 2 green chillies (chopped), salt to taste, 2 tsp lemon juice, 1/2 cup onions (chopped), oil for cooking
For paneer tikkas
1 cup paneer (cut into 2" cubes), 1/4 cup thick curd, 1/4 tsp dried ginger/saunth powder, 1 tsp chilli powder, 1/2 tsp dried fenugreek leaves/kasuri methi, 1/2 tsp garam masala, 1 tbsp plain flour/maida, 2 tbsp coriander (chopped), 2 tbsp oil, salt to taste
How to make
For chapati
In a bowl, mix maida and salt yogurt together for kneading soft and sticky dough. Cover it and keep aside for 2 hours. Mix onions, green chillies, cabbage, salt and lemon juice and keep aside. Place tava over gas and heat it. While it is heating, roll a piece of dough into a thick chapati, using dry flour. Keeping the heat high, place chapati over the tava. Slightly cook it from both the sides using little oil. Make 3 more chapatis like this.
For paneer tikkas
To prepare marinade, take curd, dry ginger power, chilli powder, kasuri methi, garam masala, plain flour, coriander, salt and 1 tbsp of oil in a big bowl. Mix well. Add paneer pieces to it, mix gently and keep aside to marinate for 8 to 10 minutes.
