Cook tasty South Indian dish Lemon Rice

Ingredients
1 and 1/2 cup rice (boiled), 3 tbsp lemon juice, 2 tbsp oil, 1/2 tbsp mustard seeds, pinch of asafoetida, 1/2 tbsp fenugreek seeds/methi dana, 1 tbsp split black gram skinless/dhuli urad dal, 10-12 curry leaves, 2 whole dry red chillies (broken), 1/2 tbsp t urmeric powder, 1/2 cup peanuts, salt to taste, 2 tbsp coconut fresh scraped
How to make
First heat oil in kadai. Now add mustard seeds and let mustard seeds crackle. When seeds crackle add asafoetida, methi dana, split black gram. Fry till dal gets golden. Now add curry leaves, broken red chillies, turmeric powder and peanuts and cook few for 2 minutes. Add boiled rice and salt in pan. Mix rice with all ingredients. Add lemon juice and mix them well. Cook on low heat for 3-4 minutes. Lemon rice is ready. Garnish with coconut and serve hot with raita.
